Founder & Executive Chef
Sergio’s culinary experience dates back to 1990 working in his fathers restaurant. With a passion and talent for cooking at the age of 18 he spent two years cultivating his craft living in Sicily. It was at this time he studied using products and produce indigenous to this region of Italy. When he came back to the united states he worked driving a produce truck and visited thousands of kitchens getting ideas to prepare for his own kitchen. When he was 21 he opened up his first 20 seat restaurant specializing in catering and quick service foods. At 27 he sold his first endeavor and opened up a larger 200 seat restaurant specializing in sicilian fare, catering and special events. After 12 years he decided to take his creative experience and move on to a larger scale of wholesale and specialized catering. Sergio takes pride in going to market daily and hand picking ingredients and produce for orders.
Founder & Creative Director
Nikki has her Bachelors of arts from Columbia College Chicago in marketing and worked her way through school in the service industry. Her professional background started with managing before becoming a General Manager of a family owned Italian eatery for 10 years. She fell in love with the marketing and events aspect and wanted to bring her talents into the catering world. She specializes in the creative design and logistics of the business and each event.
Johnny has over 35 years experience in the culinary industry. Johnny came from the West coast of Mexico training under tremendous Italian Chefs until heading up his own kitchen. He brings traditional Italian and Mexican flavors to his cooking. Johnny manages his culinary team to bring Twisted Trunk’s clients consistent and quality food.
